Extract Vital Information from ICU Monitor

We are trying to develop a product which will extract the vital information from the ICU monitors. But there are multiple manufacturers developing the ICU monitors and each monitor can have different layout. We want to train this AI which will extract each vital information so that it can extract the data for each vital value correctly even for a new layout based on the trained layouts.
